dubarry slices

An other meat... well this time I tried to make a light one.
It is excellent, but you will get hungry soon after it so do not skip the appetizer.


Ingredients for 4 persons:

- 2 big slices of  turkey breast or 4 slices of pork clods.
- 1 big cauliflower
- salt, pepper, spice mix from Greece
- olive-oil
---------------------------
- 4dl sour cream
- flour
- milk
-2 eggs/ or one egg

If you use the turkey tenderise it first if you pick the pork just fry thin slices for few minutes. It should not get dry! Since you will put it to the oven later, you don't need to fry it too much. Few minutes per each side, or you put it for 10 minutes into the oven.
Same time in salty water cook the cauliflowers that you have divided before into small prices.
When the meat is done cut it and put it to a pan. Place the cauliflowers on the top of it than treacle it with béchamel sauce. Put it into the oven till its top gets a nice gold colour. (approx: 25 min in 180 Celsius)

How to make béchamel:

The lazy one: put 5 dl of milk into a stew pan put into 2 tablespoon of flour and keep steering it. Add into 60g butter. When it turns creamy remove it from the fire and add a whole egg into it salt and pepper. If you have in your country sour cream add into 4dl to make it more creamy but this is optional.  

The original one: put 20g butter into a stew pan, put into 2 tablespoons of flower and fry it but it should not turn to brown. Add into 2dl cold water slowly. If it gets ties do not worry use the mixer to solve the problem.
After it turns into creamy you remove it from the fire. Add into 2 egg yolk, while you whip the egg-white.  Add into 4dl of sour cream and last the whipped egg-white. I told you that this is the longer version. :)




To make it more colourful: instead of one big cauliflower use one small cauliflower and one brocoli.
To make it more mmm: if you like cheese add parmesan, nature dried or cream cheese to the bésamel
